Hummus recipe





Introduction:-
Hummus and Tahini both are such wonders of Middle Eastern or Arabian cuisine that have made their place in almost all of the other world cuisines. Like Tahini, Hummus also comes in creamy form with thick consistency and is used as dip or salad dressing. Most of the people complement it with pita bread as well. There are two versions of Hummus which are used as salad dressing. One is with Tahini and another is without Tahini. I have not figured out a significant difference between the two as far as the taste or consistency is concerned but if you do not like Tahini individually then do not add it. Its all up to your taste. However, a basic hummus recipe for salad dressing does not include Tahini in it.

Let us check how we can make Hummus at our home with simple ingredients. Just take;

One and a half cup of boiled chick peas (garbanzo beans)
One teaspoon of salt or as per your taste
One tablespoon of crushed garlic
Quarter cup of lemon juice or as per your taste
Quarter cup of olive oil
Yogurt or water (if needed to reach to the right consistency)
Two tablespoons of Tahini (optional)
Quarter teaspoon of paprika powder (optional)
Quarter teaspoon of powdered cumin (optional)

Place each and every ingredient in the blender except water or yogurt and blend till you find a thick and fine mixture prepared. Add water or yogurt if you think that there is not a mayonnaise-like consistency.

Tips:-

  1. Keep Hummus in air-tight jar in refrigerator in order to keep it safe for two to three weeks.
  2. Boil chickpeas in bulk quantity in advance and store them in sealed bags in refrigerator. Before using them in any recipe, just take them out and put it in microwave or hot oven for few minutes and get them same as freshly boiled.
Serving count:-
From the above ingredients, you will get a half cup of Hummus prepared.

Calorie count:-
One and a half cup of chickpeas = 391 calories
One teaspoon of salt = 0 calories
One tablespoon of crushed garlic = 8 calories
Quarter cup of lemon juice = 13 calories
Quarter cup of olive oil = 477 calories
Two tablespoons of Tahini = 178 calories
Quarter teaspoon of paprika powder = 2 calories
Quarter teaspoon of powdered cumin = 2 calories
