Tahini recipe


Introduction:-
"Tahini" is a very famous thick sauce which is made with sesame seeds and is used as dip, marinade and salad dressing. This sauce have come out of  "Middle Eastern" or "Arabian" cuisine and is used in North African, Greek, Asian, Turkish and many other cuisines as well. There are different ways of making Tahini. Some chefs suggest to soak sesame seeds in water for twenty-four hours and then to roast and grind the bran which appears on surface. However, you will find many recipes as in this blog as well which will use raw sesame seeds to make this creamy-textured sauce. I have myself tested this quite simple recipe of Tahini which I am going to write here. It gives exact result like a canned Tahini does. You can prepare it in ten minutes and can store it in refrigerator in an air-tight jar for about weeks.

What you will need to have is;

One cup of sesame seeds
Half cup of olive oil

Preheat your oven on any temperature for 15 to 20 minutes or make sure that your oven is burning hot. Turn off the heat and place sesame seeds on the oven tray and let them get roasted in the hot oven. This will take nearly five minutes. Place the roasted sesame seeds in grinder together with the olive oil and grind them till they form a thick and fine mixture. Tahini is ready to serve or store!

Tips:-

  1. Do not leave sesame seeds in oven unguarded. Keep on shuffling them with the help of spoon or spatula because they burn very quickly.
  2. When you sense a pleasant roasted smell coming out of the sesame seeds or see them turning brown then it means that they are ready.
  3. You can use any other oil as well in the place of olive oil but the genuine recipe of Tahini asks for the usage of olive oil because it tastes great.
Serving count:-
Tahini made with the above stated recipe will be enough to be used as salad dressing on the salad made for five to six people. It will make nearly a half cup.

One cup of sesame seeds = 850 calories
One cup of olive oil = 1909 calories
