Ingredients:-
- Six oz pkg fresh baby spinach
- Twelve oz dried farfel pasta
- Two onion, thinly sliced
- Half cup light mayonnaise
- One-fourth teaspoon black pepper
- Salt
- Two table spoon of oil
- Two cup dried tomatoes
- Two lemon
- One-third ounce crumble feta cheese
- Fifteen ounce Great Northern beans, rinsed and drained
- Lemon juice
- Cloves garlic, minced
- One tablespoon snipped fresh oregano
- Two tablespoon thyme
- Mix spinach, oil, cheese, tomatoes, green onions, garlic, lemon and juice, beans, oregano, thyme, salt, and pepper in a large bowl.
- Prepare the pasta according to package directions, drain pasta and then drizzle with the remaining 1 tablespoon of oil, 1/4 cup of cooking water. Toss cooked pasta and then transfer the pasta to the salad bowl.
- Sprinkle the salad with additional salt and pepper to taste, serve now.
